Despite the caramel, this rice is not overly sweet, but has just a tinge of sweetness that is the perfect for a spicy dhansak.

Ingredients
  • 1 cup basmati rice long grain
  • 2-3 cups water to boil rice
  • salt to taste
  • 1 tbsp ghee / clarified butter
  • 1 no bay leaf/ tejpatta
  • 2 black cardamom
  • 1 inch cinnamon stick
  • 1/2 tsp jeera / cumins
  • 1 medium onion sliced
  • 1 tbsp sugar
Instructions
  1. Soak 1 cup basmati rice for at-least 1 hour.

  2. heat ghee in pan.

  3. add bay leaf,cardamom and cinnamon stick.

  4. Add sliced onion and saute it.

  5. add sugar and cook the mixture until caramelized.

  6. once the mixture is caramelized enough, add soaked rice.

  7. Add 2 cups of water.

  8. Add salt according to your taste.

  9. cook the rice until soften.

  10. Serve hot with dhansak.

Recipe Notes
  • always soak basmati rice for at-least 30 mins to 1 hour before use.
  • use fine quality long grain for best results.
