I prepared aloo methi recipe with boiled baby potatoes however you can prepare this recipe with regular potatoes as well. I prepared a tadka with finely chopped onions and I must say, sauteed onions are just enough to add fancy flavors to the dish.

Ingredients
  • 8-10 nos baby potatoes 2-3 medium regular potatoes
  • 1 medium onion chopped
  • 1/2 cup fenugreek leaves/methi leaves can be added upto 1 cup for this measurement
  • 1 tbsp oil
  • 1/4 tsp cumins
  • 1/4 tsp mustard seeds
  • a pinch of asafoetida
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp coriander powder
  • 1/4 cup water to simmer
  • garam masala optional
Instructions
  1. pressure cook your potatoes for 10 mins.

  2. cool it down cut into medium cubs, if you are using baby potatoes than just keep it aside.

  3. mean while wash and chop your methi leaves as well.

  4. heat oil in pan.

  5. add mustard and cumins.

  6. when they crackle add asafoetida.

  7. add green chilies.

  8. add onions and methi leaves.

  9. saute.

  10. add red chili powder,turmeric powder and coriander powder.

  11. add salt according to your taste.

  12. mix.

  13. add boiled potaotes.

  14. add water little bit.

  15. simmer for 3 mins on high flame.

  16. enjoy this recipe with paratha.

Recipe Notes

to boil potatoes,

  • if you are using regular potatoes, then tranfer 2-3 medium potatoes along with 2 cups of water into the pressure cooker and pressure cook it for 3-4 whistles on medium flame.
  • for the baby potatoes, use same amount of water and follow the same method.
