Pasta with very simple tomato sauce recipe is the recipe perfect for the busy weekdays. Tomato sauce is prepared with fresh tomato puree, onion and garlic which is seasoned with basic herbs like basil oregano, and chili flakes.
1 to 2 teaspoonred chilli flakesadjust to your taste

boiling pasta
to prepare your pastas, take a deep pan and add water. also add salt and few drops of olive oil in the water. Adding salt in the water is strictly for the flavour. Adding oil helps pastas not to get too sticky.
boil your pasta until soften and drain them. Wash your boiled pasta in running water and keep aside.
sauce preparation and assembling
chop your onions and minced your garlic cloves first and keep aside. also churn your tomatoes to a fine puree.( you can use ready made tomato puree too)
heat oil in pan. add garlic and onions and saute them for a while.
add tomato puree.
add salt, chilli flakes and other herbs. I am using ready made mixed-herbs seasoning here.
At this stage,also few fresh mint leaves.
cook the sauce for 10 min on medium flame.Your sauce gets thickens.
once the sauce gets perfect consistency, add boiled pastas and mix it well.
simmer for 5 minutes.
serve hot.

microwave tip: Place the oil, onion and garlic in a medium, heatproof microwave-safe bowl. Cook, uncovered, on High/800watts/100% for 2 minutes. Stir in the tomato paste and cook, uncovered, on High/800watts/ 100% for 1 minute. Stir in the tomatoes and cook, uncovered, on High/800watts/100%, stirring every 3 minutes, for 6-10 minutes or until the sauce reduces and thickens slightly. Storage: The tomato sauce (and variations) will keep in an airtight container in the fridge for 3 days.
variations:
Pasta with tomato & chilli sauce: Add 1 small chopped fresh red chilli with the garlic in step 1. Replace the parsley with fresh basil. pasta with tomato & bacon sauce. Add 2 bacon rashers, rind and excess fat trimmed, finely chopped with the onion in step 1.
Pasta with creamy tomato sauce: Stir 2 tbs of cream into the sauce with the parsley in step 3.
