to cook brinjals

ginger
grated/chopped

for garnishing
to boil rice

*i have used sona masoori here

Instructions
wash brinjals and slice them thinly. same way slice onions. you can even use finely chopped onions.
boil your plain rice first and keep aside(do not add salt at this stage)
heat oil in pan.
add mustard and cumin seeds.x
add mustard and cumin seeds.
when the seeds crackle, add curry leaves and onion. mix well.
add chili and ginger.
add sliced brinjals.
add bath masala powder and salt to taste.
add water and cook the brinjals until soften.
once the brinjals are cooked, add boiled rice and mix well.
garnish with coriander and serve hot with raita.
