Easy Malai Kofta
Malai kofta
is a rich and creamy curry recipe where potato and cottage cheese balls/ dumplings are served with tomato and onion base sauce.

Ingredients
For kofta,
1
cup
Indian Cottage Cheese (paneer)
2
medium
potatoes
boiled
salt to taste
1
teaspoon
green chili
chopped
corn flour
for coating
oil
to shallow fry or deep fry
For curry,
1
teaspoon
oil
1
black cardamoom
1
bay leaf
1
medium
tomato
diced
1
medium
onion
diced
1-2
garlic cloves
salt to taste
2
teaspoon
sugar
½
cup
fresh cream
fresh cilantro
for garnishing
1
tablespoon
melon seeds
¼
cup
water
to soak melon seeds
Instructions
First of all soak melon seeds in a warm water and keep it aside.
To make koftas
Take a box grater and grate cottage cheese and potatoes. Transfer to a bowl.
Add salt to taste and green chili.
Mix well.
Take a small portion and foam a medium ball shape.
Coat it in a corn flour properly and keep it aside.
Heat oil in a saute pan. You can either shallow fry or deep fry the koftas. Add oil accordingly.
Slowly transfer the koftas into the oil.
Fry until golden brown.
Keep aside.
To make curry,
Heat oil in a pan.
Add bay leaf and black cardamom.
Add garlic, onion, and tomatoes.
Cook until tomatoes are soften.
Transfer into a blender and blend to a smooth paste.
Take a strainer and strain the curry.
Also make a smooth paste of melon seeds and strain it along with the tomato paste.
Once you strain the curry, You will get a nice smooth paste.
Heat 1 teaspoon oil in the same pan and transfer the strained smooth paste into it.
Add salt and sugar.mix well.
Cook the curry until thickens.
Once the curry is thick enough, add fresh cream and mix well.
Assembling
Transfer curry into a serving bowl.
Place kofta on the top of it.
Add some more curry on the top if you want.
Garnish with a little bit of fresh cream and cilantro.
Serve hot.
