Aloo Paratha is a very popular north Indian recipe prepared with potato stuffing. This is very simple yet the tastiest recipe you can have in your breakfast. This shallow fried Indian bread is very popular among all generations.
While writing this post, I am missing my childhood buddy a lot as "aloo paratha" is her most favorite recipe. Actually she inspired me to share this recipe here.
Today's version of the aloo paratha is authentic Amritsar recipe. I read this recipe in Sanjeev Kapoor's cookbook back in years. I know there are many variations of the recipe by changing and combining some of the ingredients. Even I shared a recipe called "aloo cheese paratha here" some time ago.
When it comes to aloo paratha, I can say Me and my little bro are always ready to have it. My mommy cooks great ;). I am dedicating this recipe to her 🙂 .
For this recipe, I used very basic spices. Carom seeds aka Ajwain seeds taste great when added in proper measurement. Adding too much carom seeds will give some what bitter taste and unpleasant fragrance to the recipe. rest of the ingredients can be easily available in your kitchen. you can use garam masala in the stuffing as well but I am avoiding it.
I think this recipe is a secret of energized morning ;). try to serve immediately after making as nothing can beat the freshly made taste. You can serve this recipe with dollop of butter if you are a butter fan 🙂

Aloo Paratha
Ingredients
for dough:
- 1 cup whole wheat flour
- 1 tablespoon oil
- salt to taste
- ½ cup water
- 1 tablespoon oil, to knead dough
for stuffing:
- 1 cup potatoes, boiled and mashed
- salt to taste
- ¼ cup onions, chopped |1 small
- 1 teaspoon garlic chili paste
- ¼ teaspoon red chili powder
- ¼ teaspoon turmeric powder
- ¼ teaspoon coriander powder
- 1 tablespoon fresh coriander
- ¼ teaspoon carom seeds /ajwain
other:
- oil / ghee, to roast paratha
Instructions
for dough preparation:-
- add whole wheat flour into a mixing bowl.
- add oil.
- add salt to taste.
- mix.
- add water as per your need.
- start preparing your dough.
- knead your dough and prepare soft dough.
- allow it to set for 20 mins at-least.
- keep it aside.
for stuffing :-
- take a mixing bowl.
- mash your potatoes.
- add onions.
- add red chili powder.
- add turmeric powder and coriander powder.
- add salt to taste.
- add fresh coriander.
- mix it well and keep it aside.
final preparation:
- take a portion of dough and prepare a medium size ball.
- roll the ball into round shape.
- take some portion of stuffing and prepare a small stuffing ball.
- place this stuffing ball in the rolled round bread.
- start pleating.
- gently flatten the stuffed bread.
- heat tava.
- place your stuffed bread on hot tava.
- spread oil/ghee on both side.
- roast golden brown.
- serve hot.

Notes
- prepare your dough very smooth so that you can roll out easily.
- mash your potatoes well. avoid chunks. this will help to roll your paratha even and smooth.
- you can add mint leaves if you like.

- mix.
- add water as per your need.
- start preparing your dough.
- knead your dough and prepared soft dough.
- add some oil and knead to smooth.
- allow it to set for 20 mins at-least.
- keep it aside.
for stuffing :-

- add chili garlic paste.
- add fresh coriander.
- mix it well and keep it aside.
