vegetable cutlet recipe, how to make veg cutlet
vegetable cutlet is very easy ,crunchy and yummy snack /pattie recipe made with boiled vegetables and potatoes.

Ingredients
for potato mixture:

potatoes
boiled

cup
carrot
boiled

green peas
boiled

ginger-chili-garlic paste
Salt to taste
Sugar to taste

lemon juice

Garam Masala

fresh coriander

Other:

corn-flour
for corn-flour slurry

plain whole wheat vermicelli

to roast cutlets
Instructions
corn flour preparation:
Dissolve 1 tablespoon corn flour in ¼ cup of water and keep it aside.
take a plate and mix corn flour and vermicelli.
for cutlets:
Take a large mixing bowl.
Mash boiled potatoes ,carrots, and peas very well.
Add chopped coriander,lemon juice,ginger-chili-garlic paste.
Add salt, sugar and garam masala.
Mix the mixture well.
Take any shape of cookie cutter.
stuff the mixture into cookie cutter and gently press it.
you will get well shaped cutlets. do this with all your remaining mixture.
now, heat tava. add oil.
Mean while, dip your cutlets in corn flour slurry and then rub it in vermicelli mixture.
once your oil is hot enough, place cutlets on hot tava.
roast cutlets on both side until golden brown.
serve hot.

Notes
If you have any diet restriction towards consumption of potatoes then use sweet potatoes or yam.
If you want to make a Jain version, avoid garlic and raw banana instead of potato.
