Both the forms have one similarity which is a use of brown onions. The thing i like most about brown onions is the mild smoky flavor. I consider this one ingredient as a Super hero ingredient which has a ability to give instant rich flavor to the recipe. I sometimes use brown onions in my simple basmati rice as well.

Well, Yakhni pulao is the dish i tried after involving in blogging. The dish always taste great with meat. I am sharing my vegetarian version here.yakhni-pulao-priyascurrynation

Coming to the recipe, I used carrots, potatoes, beans ,green peas and cauliflower in this recipe. If you like capsicum, then you are free to add. I used regular basmati rice here. I always prefer at-least 30 min soaking before using rice in any pulao or biryani.

for the tadka,you can use any choice of dry-fruits here . I am using whole dry-fruits.I sometimes enjoy the whole crunch of the dry-fruit along with pulao. You can use finely chopped as well.

Ingredients
for bouquet garni :
  • 4 nos green cardamom
  • 1/2 tsp saunf /fennel seeds
  • 1/2 tsp coriander seeds
  • 1 inch cinnamon
  • 2 no bay leaf
vegetables and stock:
  • 1.5-2 cups water
  • salt to taste
  • 1.5 cup mix vegetables , chopped 1 small potato,1 small carrot , 2 tbsp green peas and some cauliflower
for tadka/garnishing:
  • 1 tbsp ghee / clarified butter
  • 1/4 cup onions sliced
  • 1/4 tsp cumins
  • 1/4 cup mix dryfruits
  • 1 tbsp raisins
other:
  • 1/2 cup basmati rice soaked
  • salt to taste
  • 2 tbsp oil
  • 1/2 tsp cumins
  • 1 tbsp ginger chili garlic paste
  • 1/4 cup onions chopped
  • 4 green cardamom
  • 1 inch cinnamon
  • 1 bay leaf
  • 1 cup earlier prepared veg stock
  • 1/2 cup water
  • 1 tbsp yogurt
Instructions
for vegetable and stock preparation:-
  1. heat kadai.

  2. add water and bring it to boil.

  3. add chopped vegetables and salt.

  4. add remaining water.

  5. add spice bouquet garni.

  6. cover with lid.

  7. bring veggies to boil for 8 mins.

  8. separate veggies and vegetable stock. keep both aside.

for tadka / garnishing:
  1. heat ghee.

  2. add some cumin.

  3. when they crackle add sliced onions.

  4. cook onions until brwon.

  5. add dry-fruits and roast it well.

  6. keep it aside.

for rice preparation:
  1. heat oil in pan.

  2. add cumins.

  3. add cardamom,cinnamon and bay leaf.

  4. add ginger chili garlic paste.

  5. add onions and saute it.

  6. add soaked rice.

  7. add salt to taste.

  8. add vegetable stock and water.

  9. mix it well.cover with lid.

  10. cook for 5 mins first.

  11. after 5 mins, add yogurt and mix it well.

  12. cook rice until soften.

  13. serve hot.
