Tomato methi pulao recipe with step by step photos:- Tomato methi pulao is very easy recipe to make.It is not only easy recipe but it is very healthy too.This is a power-pack recipe with rich vitamin C and iron. As we know that tomato is a source of vitamin C. Methi or fenugreek leaves are also a good source of both- iron and vitamin C. It has a high amount of fiber too.Methi leaves also helps in controlling sugar level and cholesterol.
Overall this is a recipe with mild spices so i can say, It is a perfect kids lunchbox recipe. I have captured the pics along with my Dal pakhtooni. But this recipe goes best with any raita and dal that has mild flavor like dal banajari , dal tadka , Gujarati moong dal, lasooni dal , Moth dal.

Tomato Methi pualo recipe , how to make methi tomato rice
Ingredients
- 1 cup basmati rice, cooked
- 1 medium tomato, chopped
- ½ cup fenugreek leaves, chopped
- salt to taste
- 1 small onion, chopped
- 1 bay leaf
- ½ teaspoon turmeric powder
- a pinch of coriander powder
- a pinch of garam masala
- 1 teaspoon cumin seeds
- 1 tablespoon oil
- fresh coriander, to garnish
Instructions
- If you don't have cooked rice available then cook the rice first and meanwhile complete your chopping.
- now, Heat Oil in non-stick Kadai.
- Add cumins.
- When they crackle , add bay leaf and asafoetida.
- Add onion and saute it until golden brown.
- Add tomatoes ,salt , garam masala,coriander powder and turmeric powder.
- Mix it well. Add methi leaves.
- once the tomatoes are perfectly cooked, Add cooked rice.
- Mix it well.
- Cover with lid for 2 min to blend the flavors with rice.
- Garnish with coriander.Serve hot.
Notes

- I have used frozen fenugreek leaves here.You can use fresh leaves as well.
