Paneer Pasanda Recipe with detailed photos.I have tasted paneer pasanda once in a restaurant and since then I wanted to try.Paneer pasanda is not for your everyday cooking. It is a delicate recipe requires time.

I have specially prepared homemade paneer to make this recipe and I have already shared a recipe here.

The version I am going to share today is restaurant style.Paneer is stuffed with some green paste originally but i have used red tomato base paste here.

If you run out of time, You can directly shallow fry paneer slices without stuffing.Or you can even make paneer tikki.

The gravy is quite simple and easy to make and it has a very delicate flavor of cardamom and cinnamon.

This paneer pasanda goes best with jeera rice, dal, and paratha.

Ingredients
for paneer sandwiches:
  • 250 gms malai paneer
  • 1 small tomato grated
  • 2 tbsp grated paneer can substitute grated cheese instead of paneer
  • 1 tbsp raisins
  • 2 tbsp cashews chopped
  • 1 tbsp green chilis chopped
  • 1 tbsp coriander leaves chopped
  • 1/2 tbsp mint leaves optional
  • 1/4 tsp red chili powder
  • 1/2 tsp cumins
  • salt to taste
  • oil to deep fry
for pasanda gravy:
    onion-tomato paste:
    • 2 medium onion roughly chopped
    • 2 tbsp oil
    • 5-6 nos garlic cloves
    • 1 tbsp ginger chopped
    • 1 nos green chili
    • 2 medium tomato diced
    • 10-12 nos cashews
    • 1/2 inch cinnamon
    • 2 nos green cardamom
    • 2 nos cloves
    Other:
    • 1 tbsp oil
    • 1/2 tsp cumins
    • 1 nos bay leaf /tej patta
    • 1/2 tsp turmeric powder
    • 1/2 tsp kashmiri red chili powder
    • 1/4 tsp coriander powder optional
    • a pinch of garam masala
    • 1/4 tsp sugar
    • 1 tsp kasuri methi
    • 1 cup water
    • 2 tbsp low fat cream
    • salt to taste
    • coriander leaves garnishing
    Instructions
    Method for preparing tomato-onion paste:
    1. Heat kadai.Add cardamom(cardamom pods), cinnamon,cloves and onion.Saute it until brown.Add garlic,ginger and green chili.saute it.

    2. Now, Add tomatoes and cashews.Cover kadai with lid and cook the mixture for 2-3 mins on medium flame.

    3. Cook the mixture very well.

    4. keep the mixture aside and let it cool down.

    5. Make a fine paste and keep it aside.

    Method for paneer sandwich:
    1. take a mixing bowl and mix all the ingredients expect paneer slices.

    2. slice your paneer into triangle.

    3. slice each paneer into two halves gently.

    4. stuff paneer triangles with stuffing.

    5. heat oil in nonstick pan shallow fry paneer slices.

    6. keep the slices aside.

    Method for gravy/assembling:
    1. Heat Oil in kadai.bay leaf and cumin.

    2. When seeds crackle,add onion tomato paste.

    3. Cook the paste until it reduces oil from sides.

    4. Add salt,red chili powder,cumin powder and mix well.

    5. Add cream and mix well.

    6. Add sugar,kasuri methi.

    7. Add paneer slices and gently mix .

    8. garnish with coriander.

    9. Serve hot.

    Recipe Notes
    • skip cream if you do not have it.
    • for a vegan option substitute paneer with tofu and skip the cream. you can also use coconut cream instead.
