I was actually unaware with this recipe even-though I am in pune. however, few months back, there was just a regular get-together at friend's home where her cook ( who's maharashtrian) prepare pitla bhakhri for us and since than i am a fan of this recipe. I immediately ask for the recipe and she shared this amazing recipe.

In this recipe,besan dissolved in water, is cooked with onions, green chillies and an aromatic tempering.Tempering is a heart of indian curries and this pitla really tastes great when you add some fresh curry leaves along with garlic.

Maharashtra besan pitla recipe
RATE RECIPEIngredients
- 1 cup besan
- 1 cup water
- 1 medium onion, finely chopped
- 2-3 small green chilies, adjust to your taste
- 1 tablespoon oil
- ¼ teaspoon mustard seeds
- ¼ teaspoon cumins
- 4-5 nos curry leaves
- ½ teaspoon red chili powder
- ¼ teaspoon turmeric powder
- ¼ teaspoon coriander powder
- fresh coriander, for garnishing
Instructions
- heat oil in kadai.
- add mustard seeds and cumins.
- when the seeds splutter, add curry leaves.
- add onions and green chili.
- saute it for a while.
- add red chili powder, turmeric powder and coriander powder.
- add salt to taste.
- add water.
- allow it to boil.
- now, add besan and stir it continuously.
- avoid lumps.
- simmer the mixture for 3-4 mins.
- serve hot with bhakhri.
