For today’s khajoor paratha, I prepared a simple date stuffing by making a fine paste of khajoor/date. Dates is an English word.”khajoor”,“Kharjura” and “Khajhuru” are the words in gujarati, Kannada and Konkani respectively. Dates need no introduction and we use this dry fruit generously in the preparation of cakes, desserts, biscuits etc.

Ingredients
  • 1 cup dates deseeded, approx
  • 1 full cup whole wheat flour
  • salt to taste
  • 1 tbsp milk for smooth date paste, [optional]
  • 1 tsp oil
  • 1 tsp oil to knead dough
  • ghe/oil/butter to roast paratha
Instructions
stuffing preparation,
  1. remove the seeds of dates. Make sure to remove each seed else it will damage your mixer.

  2. transfer dates into a mixer jar.

  3. add milk.

  4. crush to a smooth paste.

  5. keep aside.

dough preparation,
  1. take a large bowl.

  2. add whole wheat flour in that.

  3. add some salt and oil.

  4. add water as needed.

  5. prepare a soft dough.

  6. add some oil and knead for 5 mins.

  7. allow the dough to set for 5 to 10 mins.

  8. keep aside.

paratha preparation,
  1. take a portion of the dough and make small ball.

  2. flatten a bit.

  3. take a portion of the stuffing and prepare a ball.

  4. place the stuffing on the flattened paratha.

  5. pleat the dough well.

  6. now, roll the ball to a medium thick circle.

  7. heat tava.

  8. place the paratha on hot tava.

  9. spread ghee on both sides.

  10. roast until golden brown.

  11. serve hot.

Recipe Notes
  • you can add 2-3 almonds along with dates. This will give a prominent taste to the stuffing.
  • you can use oil OR butter instead of ghee to roast paratha.
