How to cook veggies without Pressure-cooker, Step wise tutorial
Hey friends,
Today's post is not about Recipe.The tutorial I am going to share is very basic method to cook vegetables with-out pressure-cooker.Pressure cooker  is a boon for indian kitchen specially because within a few minutes, it cooks vegetables perfectly. But i have been asking to share alternative method to cook few veggies Specially for those who doesn't have pressure cooker.

Cooking hard veggies like potatoes will take some time to cook perfectly.I have learn this method from my mommie as some of our curries are prepared without pressure cooker.
The images i am going to share here is just a demonstration so that you can get clear idea about method.
This Cooking method works best for me in my dry subjies like Aloo-gobi, Gobi-matar etc..

If you are planning to cook whole potatoes, It takes 1 hour at-least OR some times more than that. So always use vegetable pieces.

  how to cook vegetables without pressure-cooker

Cook Time :depends on the vegetables type

Equipment needs:
  • Deep pan OR kadai
  • Steel Lid to cover 
  • water- 3 cups approx
  • few vegetables of your choice,diced- 1 cup
Method 1/one: 
  1. Take a deep pan OR kadai. Add 3 cups of water bring it to boil.
  2. Add pinch of salt which is totally optional.
  3. Add diced vegetables into boiling water.
  4. Cover you kadai with lid.
  5. Now, Add 2 spoons of water on the lid.
  6. Bring the mixture to boil on slow to medium flame. while boiling, you can see that uper lid's water started making small bubbles which is a sign that cooking procedure is started.
  7. Cook the vegetables for 15 mins atleast on low flame.
    • Normally veggies are perfectly cooked at the time when the water of upper lid is completely dissolve into steam. After this you can see that lid is completely dry.
    • But sometimes veggies require more time to cook.
  8. Check the veggies are soft enough.
  9. If it is not cook again for some time. Add water on upper lid. Check water in kadai also. If needs,add more.
  10. When veggies are cooked ,drain it.
Method 2/Two:(if you want to prepare direct curry)
Case :- Potato curry without pressure cooker
  1.  Heat 1 tbsp oil .
  2. Add mustard seeds, cumins. When they crackle add asafoetida.
  3. Add garlic paste and tomato puree.
  4. Cook for a while.
  5. Add Potato pieces,Salt,turmeric powder, red chili powder and mix well.
  6. Add 2 cups water.
  7. Cover kadai with lid.
  8. Add 2 tbsp water on the lid and cook curry on slow flame for 15 min at-least OR until water is completely dissolve.
  9. Check potatoes are soft enough.
  10. Serve hot.
    • I am adding water on the lid because it helps generate steam from upside which is necessory to cook veggies perfect and somewhat fast.
    • Both methods are Similar. the difference is, in first method you get boiled vegetables and in second, you get curry.
