My today's Lunch treat was "Zaffrani Pulao" with home-style dal tadka. Zaffrani pulao is a A mix of rich ingredients like dry fruits, whole spices, sugar and milk are used to make this dish of sweet, saffron rice.
Since this is rich recipe, You can not avoid Saffron(Kesar) and dry-fruits. I have added Fresh Matar Because i LOVE green peas in my pulao recipes but you can avoid it. This pulao is bit sweet in taste but you don't need to add sugar. Saffron and milk will give mild sweetness to the saffron rice.
I am using Almonds, cashews,walnut and raisins as a dry-fruit mix. Green cardamom,Cinnamon is MUST while preparing tadka.
Ghee / Clarified butter adds extra flavor to the recipe,but if you don't like Ghee then you can use regular oil.
