I am such a big fan this simple rice kheer.This is the main reason i don't try much variations in kheer. Kheer is Holy "prasad recipe" which majority of us offer to god on various occasions.
Kheer is a rice pudding from the cuisine of the Indian Subcontinent, made by boiling rice, broken wheat, tapioca, or vermicelli with milk and sugar; it is flavoured with cardamom, raisins, saffron, cashews, pistachios or almonds. It is typically served during a meal or as a dessert. It is also known in some regions as payasam, payasa, gil-e-firdaus and firni.


I have flavored my kheer with grated coconut and saffron. I Have got this flavor idea from my neighbor aunty.There is  a ramdan month currently running and i think you can try this kheer recipe as well.
I really like quite thick kheer so i always boil my rice along with milk so that it works on both sides. It thickens milk as well as helps to cook rice.

You can use any type of rice expect Boiled rice. I have ued regular basmati rice here.
For best result i recommend you to soak rice for 20 min at-least.

Recipe Details for making Classic Rice Kheer below:

  Recipe Easy Kheer Recipe-how to make basic khir

Prep Time :20 min
Cook Time :30 min
Total Time :50 min
Main Ingredient :Full cream milk,Rice
Serves :1 medium bowl
Cuisine : Indian

Ingredients:
  • 1 litre full cream milk
  • 1 cup rice
  • 1 cup water [to soak rice]
  • 1 cup water to boil rice
  • Sugar to taste
  • 1/4 cup Fresh coconut,grated
  • 7-8 saffron threads
    Method/Assembling: 
    1. Soak rice for 20 min and rinse it well.
    2. Prepare your coconut and keep it aside.
    3. Heat deep pan and add 1 cup water.
    4. Add soaked rice and cook them on high flame.
    5. When all the water content is absorbed, add milk.
    6. turn your flame to low.
    7. Bring the milk to boil on slow flame until rice is soft and mushy.
    8. when rice is soft enough ,you will see the milk also gets thicken consistency.
    9. Add Sugar ,coconut and mix them well.
    10. boil the mixture for 5 mins.
    11. Add saffron threads and turn off the flame.
    12. You can serve Hot OR chilled.
      Note:
      • Please use Fresh Coconut only. I have never used dried coconut powder so can not tell you how it tastes.
