There is one cuisine which i Love most after Indian cuisine is Middle eastern cuisine. I some how feel that middle eastern cuisine is just a brother of Indian cuisine.Today's recipe is the very first recipe from that on blog- Chickpea Falafel.
Falafel is actually deep fried tikki /patties/balls made from white chick peas/ kabuli chana OR fava beans.Falafel is the recipe gifted to us by Lebanese Cuisine. Falafel is usually stuffed with bread/pita bread along with tahini,hummus and some veggies.

There are two methods to prepare falafel. in first method, chickpeas are soaked overnight in water.Then chickpeas are drained and ground coarsely with spices. This is reliable and easy method. Traditionally falafel was prepared using this method.

I followed second method here, I soaked dried chickpeas for 5-6 hours and then pressure cook them.
After boiling them,i just mashed them and add whole spices . Rest of the method is same.
Before moving to the ingredients, I just wanted to warn you about second method.  your falafel may break if binding agent is not enough.

I have never used canned chickpeas so i can not tell you how it tastes with canned pack.

  Falafel with cooked chickpeas Recipe-how to make Falafel

Prep Time :  10 min (without soaking time)
Cook Time : 20 min
Total Time :30 min
Main Ingredient : White chickpeas
Serves :6 - 7 Falafel
Cuisine : Middle Eastern , Lebanese

  • 1 cup white chickpeas/kabuli chana,cooked
  • 1 small to medium onion/pyaaz, finely chopped 
  • 2-3 garlic/lahsun, crushed or finely chopped or minced
  • 1 tsp coriander powder/dhania powder
  • 1/2 tsp red chili flakes
  • 1 tsp cumin powder/jeera powder 
  • 1/2tsp crushed black pepper or pepper powder 
  • 2 to 3 tbsp all purpose flour/maida or bread crumbs or whole wheat flour/atta 
  • 3 tbsp fresh parsley or coriander leaves, finely chopped or minced 
  • 1/2 to 1 tbsp lemon juice
  • Salt to taste 
  • Oil for deep frying

  1. Add All ingredients in mixing bowl.
  2. Mash chickpeas well and mix all ingredients.
  3. Form into small or medium sized balls or patties.
  4. Deep fry in hot oil like the way you would do for pakoras/fritters.Turn over to the other side whilst frying to ensure that the falafels are evenly fried.
  5. Drain falafel on kitchen tissues to remove excess oil.
  6. Serve falafel hot with pita bread or serve as snack/starter.

  4. I just had falafel at a restaurant a few weeks ago that were dry and almost flavorless. Yours sound and look just the opposite, they must be so very tasty.
