Gujarati Khaman Dhokla with step by step photos 
WE gujju loves dhokla and we can make any variations of dhokla.I think most of you in india familier with dhokla . But before moving further ,Let me remind you what is dhokla ??? .Dhokla Is a savoury cake reipe which made from fermented batter of Rice and chickpeas.It may also interest you to know that "dukkia" was the initial name given to the dish in 1066 CE and later "Dhokla" word became popular in Gujarat.

As told in beginning, we can make any variation and "Khaman Dhokla" is one of them. It is made from Chickpea Flour and requires LESS time so we put this recipe in "Instant recipes" category.Dhokla Is gluten free Recipe..
Today's share is Instant Khaman Dhokla recipe which was made without Fruit salt.I have also share a recipe using fruit salt before on blog.

The reason to avoid "fruit-salt" is the fragrance and savory flavour it leaves behind. However it totally depends on you because some may didn't mind the fruit salt flavor. I personally did not like the flavor of fruit-salt so was wondering about the alternatives.

I have used Baking powder and baking soda combo here to give soft ,light and fluffy texture to dhokla. I used this combination in my Vegan cake with different measurement.It comes out perfect for me.
I have also use sugar water and Curry leaves Tadka to give an exotic flavor and sweetness.It is VERY easy recipe if your measurements are perfect.

Recipe Details for making Khaman dhokla below:

  Khaman Dhokla Recipe-how to make Naylon Dhokla

Prep Time :30 min
Cook Time :15-20 min
Total Time :45- 50 min
Main Ingredient : Besan / Gram flour/chickpea flour
Serves :8 medium piece
Cuisine :Gujarat

Ingredients for batter:
  • 1 cup -chickpea flour/besan/gram flour
  • 1 tbsp- sooji/rava/semolina
  • 1 tsp -baking powder
  • 1/2 tsp- baking soda
  • Salt to tatse
  • 1/2 cup water
  • 1/2 tsp lemon juice
Ingredients for Tempering/Tadka: 
  • 1 tbsp Oil
  • 1/4 tsp Mustard seeds
  • 5-6 curry leaves
  • Fresh coriander leaves for garnishing
  • 1/4 tsp sesame seeds[optional]
  • 1 to 2 -Green chilies,sliced 
Ingredients for sugar water: 
  • 1 tbsp - sugar
  • 4 tbsp water
Method for preparing batter:

  1. Take a mixing bowl and transfer Gram flour and Sooji and mix well.
  2. Add salt,baking powder,baking soda and water.
  3. Whisk this batter well.Make sure to avoid lumps. Keep this batter aside for 15-20 mins.
Method for making Dhokla:  
  1. Before making dhokla prepare sugar water. dissolve Sugar in water and keep it aside.
  2. Place your steamer on stove flame.
  3. Take a deep vessel and grease it using oil.
  4. take your batter and add lemon juice.mix it very well.your batter will transform in light and fluffy consistency.
  5. Transfer this batter in greased vessel.Place this vessel in steamer and cover your steamer with lid.
  6. Steam this dhokla for 10 to 15 min on medium flame.
  7. Check dhokla with tooth pick. insert tooth pick in the middle and if it comes out clear your dhokla is ready.
  8. Now take the vessel out side and using spoon spread some sugar water on the top of dhokla.
  9. After a min ,again spread some sugar water.continue this process till your sugar water bowl is fully empty.
  10. Let the dhokla cool down completely so that you can remove it easily.
Method for tadka/Assembling:
  1. Gentelly transfer you dhokla in plate.
  2. In tadka pan, Heat Oil.
  3. Add mustard seeds. when they crackle , Add green chilles and sesame seeds.
  4. Add curry leaves.turn off the flame and pour this tadka on the top of Dhokla.
  5. Garnish with coriander.
    Please transfer dhokla in plate before adding tadka
  6. Cut them into pieces.
  7. Serve hot with green chutney.
    • Please spread your sugar water on HOT surface of dhokla so that besan can absorb the water quickly. 
    • You can sprinkle coconut powder along with coriander leaves as well.
