I don't need to say ,how famous this dish is. Sev-puri is one of the mouth watering recipe among chaats in india.It is basically a street food from mumbai.I eat Panipuri,sevpuri and bhel anytime.
You will find sev-puri and many other chaat recipe on streets in most of the cities.Nowadays even five star hotel, several other joints offer sev puri, pani puri and chats in their menu.

Sev-puri chat is spicy ,tangy and sweet with so many different ingredients. What makes this dish unique is the different texture of their ingredients.
It is very easy to assemble sev-puri.All you need is ,
  • Puris or papdies - crispy fried puries
  • Green chutney - Spicy chutney made from coriander and mint.
  • Tamrind chutney - sweet and tangy chutney
  • Red chutney -[optional] garlic chutney
  • Veggies - boil potaotes and chickpeas,chopped onion and tomatoes.
And you are done.
You need to serve sev-puri immediately after assembling otherwise your Puri will become soggy.

I recommend you to prepare chutney one before. It will save your time. Also,I am using chatpatta chick peas here which is totally traditional recipes, only boil potaotes are use.

Recipe Details for making Sev Puri below:

  Sev-puri Recipe-how to make mumbai sev-puri

Prep Time :40 min + soaking time
Cook Time : 15 min
Total Time : 1 hour approx
Serves : 3 plates
Cuisine :Mumbai ,Indian , Street food

Ingredients for puri assembling: 
  • puffed,crispy puries - 21 pieces
  • Oil- 1 tsp
  • Salt - to taste
  • Onions,finely chopped - 3 medium size
  • Tomatoes ,finely chopped-3 medium size
  • Tamarind chutney - 1/2 cup approx
  • Green Chutney - as per your need[1 cup approx]
  • Red chutney- as per your need {optional}[1 cup approx]
  • Potatoes,Boiled and chopped - 2-3 medium or  large size
  • Coriander leaves - for garnishing
  • chat masala -As per you need[optional] 
  • Lime juice - 1/2 tsp OR as per taste 
  • Curd - 1/2 cup
  • Besan sev - as per your need
Ingredients for chickpeas preparation:
  • Black chickpeas,soaked - 1/2 cup 
  • Oil -1/2 tsp
  • Red chili powder - a pinch
  • Chat masala - a pinch
  • Salt - to taste
    Method for chickpeas preparation:
    1. Soak Chickpeas overnight OR 5 hours in sufficient water.
    2. After soaking ,Pressure cook them on medium flame for 5 whistles.
    3. Heat oil in pan.
    4. Add boiled chickpeas,salt,red chili powder and chat masala.Saute it for a while.
    5. Turm off the flame and add boiled potaotes into that .
    6. Mix them well and keep it aside.
    1. keep all the ingredients like the chutneys, Potato-chickpeasmix, chopped onions and tomatoes, sev, lime juice ready on your work surface.
    2. arrange the puris on a plate. top it up with potato-chickpea mix.
    3. add chopped onions and tomatoes to it.
    4. sprinkle some chaat masala on it, if you want at this stage.
    5. top up with the green chutney as much as you want. then top up with red chutney.
    6. then with the sweet chutney as much as you want.Add some curd .
    7. sprinkle sev on top. again sprinkle some chaat masala. sprinkle also black salt as well.
    8. add a dash of lime juice to the sev puri. garnish sev puri with chopped coriander leaves.
    9. serve sev puri immediately.
      • you can avoid curd.It totally my liking to adding curd in this recipe.
      • * i have not included chutney making time thin this recipe.
