Here is an tempting and signature recipe from the LAND OF GUJARAT. Yes,this is Gujarati dal.You may know that it is very Famous because of its spicy,sour and sweet taste.
This Gujarati dal recipe is the perfect reflection of gujarati culture.Gujarati meal is not complete without this dal.It is very healthy so you can consume it everyday. I have also mentioned this dal as Authentic Low calorie indian-food - you can read full article on low calorie food here.
This dal always take an important place in my meal planning.It is quite different from other punjabi dals as punjabi dals are thick and this gujarati dal is thin in consistency.This dal goes best with plain rice.Trust me i can eat this dal chawal everyday in my lunch and dinner as well.

In this dal, very typical ingredients and spices are used. Toor dal OR pigeon peas splits is the main ingredient. I have also share Gujrati Moong dal as another version of this recipe. This dal takes festive color when peanuts and drumsticks are used in this recipe however on regular basis,we don't add peanuts and drumsticks.I am sharing Every-day meal Version here.
To get success, You have to balance the Sour and Sweet flavor.If you fail in first few attempts,Don't worry this will come only by some experience.I can surely tell one thing at the end is, "To make Perfect Gujrati dal is an art".

  Gujarati dal Recipe-how to make Gujarati toor dal 

Prep Time :20 min

Total Time : 30-35 min
Main Ingredient :Pigeon Peas spilt
Serves :2
Cuisine : Gujarat

Ingredients to pressure cook:
  • Toor Dal | Splits Pigeon Peas- 1/2 cup
  • Water - 1.5 cup
Ingredients for Tempering(tadka):
  • Oil - 1/2 tbsp
  • Ghee|Clarified butter - 1 tbsp
  • Mustard seeds - 1tsp
  • Cumin seeds - 1 tsp
  • Curry leaves - 5-6 nos
  • Asafoetida - a pinch
  • Methi seeds|Fenugreek seeds - 5-6 nos
Other Ingredients :
  • Water - 1.5 cups
  • Salt - to taste
  • Turmeric powder - 1 tsp
  • Red chili powder 1 tsp
  • Tomatoes , finely chopped - 1 medium size
  • Ginger paste - 1tbsp  or 1 inch grated
  • Green chilies - 2 medium size ( i am using spicy chilies here)
  • Coriander leaves , for garnishing
  • Jaggery - 1 tbsp to 1.5 tbsp
  • Lemon juice - 1 tbsp
    Method/Assembling: 
    1. Wash toor dal very well in cold water.You can even soak dal for 15-20 min in water but if you don't it is totally fine.
    2. Add thid dal in pressure cooker with 1 cup water and pressure cook it for 10 to 15 min OR 3-4 Whistle on medium flame.
    3. Open cooker lid and Check the dal is soft enough.Mash this dal very well.Add remaining 1.5 cup water and mix them well.At the end you will get a smooth and thin mixture in pressure cooker.
    4. Now, Add Salt ,Tomato,Ginger,Green chili,turmeric powder ,red chili powder and jaggery.Boil this dal for 5 min on medium flame .
    5. In Tadka pan, Heat Oil and Ghee together .
    6. Add mustard seeds, cumin seeds. When they crackle add asafoetida and Curry leaves. Pour this tadka immediately to the boiling dal.
    7. Boil again for 2-3 min.
    8. At last, Add lemon juice and mix well.
    9. Garnish with coriander and serve hot with  plain rice
      Note:
      • you can adjust the amount of green chilies according to your taste.
