Basic eggless vanilla cake -step by step guide

Finally, This is my first ever baking recipe-post on this blog and i am quite excited about it.I am excited about two things today.
first,It is my hubby's birthday today and second ,It is my first ever baking recipe on this blog.
I made this cake especially for my hubby ;p. And this is a Pressure cooker recipe. I still remember my 5th birthday when my mom made a cake for me and gave me a party with family and friends. She taught me to make a basic cake. But by the time i almost forgot the recipe.I was searching about cake recipes on internet for two months at-least.I also made some disaster as well.(hi hi hi ..;p) 

And now,I am so happy to share my experiment for making a perfect vanilla sponge cake recipe with you guys.
I adopted this recipe from vegrecipesofindia blog and fullscoop blog. After watching lot of recipes on Beulah's fullscoop blog. I finally put my guts for this recipe.
I made this recipe using curd. M mom used to make this recipe with condensed milk but i am using powdered sugar and curd here.
I have observe so far,
If you want to make a perfect cake-You must follow the measurements.
If your measurement goes wrong,you will not meet the perfect end.I am using Lemon-juice and baking soda in this recipe because the reaction of this mixture helps to make your cake spongy and moist.The use of baking powder in cake recipes is to get fluffy and light cake. I don't know about any substitute of baking powder.
Also, I am using fresh Lemon&Buttercream cheese frosting here.I am not good in decoration but i gave a try to this.

  • All purpose flour/Maida - 1.5 cup
  • Baking Powder - 1 tsp
  • Salt - a pinch
  • Water - 1/2 cup
  • Butter - 1/2 cup
  • Powdered sugar - 3/4 cup approx OR as per your need
  • Yogurt - 3 tbsp +  1 tbsp water
  • Lemon juice - 1 tbsp
  • baking soda - 1/2 tsp
  • Vanilla Extract - 1 tsp
    1. First sift the all purposed flour/maida with the baking powder and a pinch of salt in a mixing bowl or pan. just keep everything ready as you have to be quick enough to mix the batter.
    2. Grease your cake mold with butter or oil. you can also line the mold with butter paper and then grease the butter paper with oil or butter.
    3. Now take butter and Whisk it in  another mixing bowl.after 5 min you will get nice smooth butter texture.There is no need to heat it. 
    4. Add the sugar to the butter. stir and Whisk well. keep aside. 
    5. Now in a measuring cup or in a small bowl, whisk the 3 tbsp yogurt + 1 tbsp water till smooth. add 1 tbsp lemon juice. then add the baking soda and stir.
    6. Pour the butter+sugar mixture, ½ cup water and the frothing yogurt+vinegar+baking soda into the sieved flour. add vanilla extract and whisk them well for 3 min. be quick enough to fold and make a lump free batter. don't over do the folding. 
    7. Pour the batter in the greased baking mold. shake and tap the sides of the pan so that air bubbles are released. 
    8. Fill the cooker with sand till 1 1/2 inches and place the plate you get along with the cooker on top of it.
    9. Preheat the cooker for 5 minutes on high flame with the sand.(We are following the same principle as in the oven but here the sand is heated and the cake gets cooked in the heat produced by the sand.)
    10.  Now, keep the flame in low and place the Mold with the cake batter carefully inside the cooker.
    11.  Close the cooker, and Relax as it will take 4o minutes to 1 hours for the cake to be done.
    12.  Check it after 40 minutes by inserting a wooden toothpick in the center of the cake, if it comes out clean, your cake is done, otherwise cook for some more time. (Mine took 45 min) 
      Notes for pressure cooker:
      • I used the aluminum cooker vessel for baking this cake.
      • If you cannot get sand, you can also spread salt all over the bottom/base of the cooker.  
      • Do not use the rubber gasket.
      • Do not use the weight. (weight valves)
      • Do not pour water inside the cooker as we are not steaming the cake.
      • It is preferable to use old cooker. Do not heat empty cooker without the sand as your cooker will get damaged. 
      • You can adjust the amount of sugar according to your taste.

      I tried to demonstrate the inner texture of the cake by this picture.
