Hello Friends...

My today's Recipe is Patra OR Pattarveliya.
Paathra is mainly a gujrati snack recipe which is made from colocasia leaves.It is very healthy because cooked with absolutely NO Oil.Paatra is also found as street food in Maharashtra as well .
Colocasia Leaves are stuffed with spicy ,sweet and tangy chickpea flour Mixture.Paatra tastes best when deep fried but we are making HEALTHy version so we avoid deep frying and end the dish by shallow frying. It can be serve with Tea and Coriander Mint Chutney.
When you are making Pattras just keep in mind these two things.
  • Roll them tightly, and 
  •  Never forget the tempering

Paatra

Prep Time : 15 mins
Cook Time : 20 mins
Total Time : 35 mins
Main Ingredient : Colocasia Leaves and Gram flour
Serves :2
Cuisine :Gujrat , Maharashtra
Ingredients For Gram Flour Mixture:
  •  Gram Flour-1 + 1/2 cup
  • Salt - to taste
  • Red chilli powder - 1 tsp
  • Turmeric Powder - a pinch
  • Sugar - 2 tsp
  • Oil - 1 tsp
  • Ginger chilli paste - 1 tsp
  • Asafoetida - a pinch 
  • water - as per need (5-6 tbsp approx)
Other Ingredients:
  • Colocasia Leaves - 5 medium size
  • Oil - 2 tbsp
  • Mustard seeds - 1 tsp
  • Cumin seeds - 1 tsp
  • Curry leaves - 4-5
  • Sesame seeds - a pinch
  • Grated Coconut - for  garnishing
  • coriander  - for garnishing

Method / Assembling:
  1. Wash Colocasia Leaves and Dry using towel.
  2. Now add all Besan mixture ingredients in bowl.and make a thick paste.
  3. Place the leaves with side facing you on a clean dry surface and remove the veins using knife.
  4. Place a leaf ,Apple Besan mixture and spread it using your fingers to make even layer.
  5. Now place the another leaf on the battar spreaded leaf in opposite direction.and spread mixture again.
  6. Repeat this process for 5 leaves.
  7. Roll these leaves tightly and keep it aside.

  8. Put this Roll in greased plate and  steam this roll for 10- 15 minutes on medium flame.
  9. Now cut this roll in small pieces.
  10. Heat Oil in Pan.
  11. Add Cumin, Mustard seeds and sesame seeds. When seeds Crackle add Curry leaves and Paatras.
  12. Shallow fry it on medium flame.
  13. Garnish with Coconut and Coriander.
  14. Serve hot with Coriander Mint Chutney.

Note: 
  • Do not add too much water in besan mixture because we want quite thick paste for application. Use Water as per your requirement.
