Here comes my recipe of the week - Kaju Butter Masala in restaurant Style.
This is the recipe used to make on some special occasion. This is very rich and creamy gravy. There are mainly two version of Kaju OR Cashew gravy one is KAJU KHOYA and the another one is KAJU BUTTER MASALA.
About The recipe, I can only say that- This is super rich and creamy in texture. This richness and creaminess is come from fresh cream, cashews and butter. This Is quite time consuming as we have to prepare onions, Cashews and tomatoes seperatly but it is worth trying.

This gravy goes best with Paratha , Roti or can also Check my tutorial on how to make perfect paratha.

Recipe Details below:

Kaju Butter Masala

Prep Time : 15 mins
Cook Time : 20 mins
Total Time : 35 mins
Main Ingredient : Cashews
Serves : 3
Cuisine :North Indian , Indian
  • Cashews / Kaju - 1 cup
  • Onions - 1 large size (Roughly chopped)
  • Tomato - 1 small size ( roughly chopped)
  • Salt - to taste
  • Red Chilli Powder - 1 tsp
  • Turmeric Powder - 1 tsp
  • Tej Patta OR Bay Leaf - 1
  • Cloves - 3
  • Cinnamon stick - 1 inch piece
  • Dried Fenugreek Leaves - 1/2 tsp
  • Coriander - for garnishing
  • Oil - 3 tbsp
  • Butter - 3 tbsp
  • Green Chilli and Ginger Paste - 1 tbsp
  • Fresh Cooking Cream - 3 tbsp
  • Cumin seeds - a pinch
Method / Assembling:
  1. First, Heat Oil and Deep fry(OR ROast) Cashews till Golden Brown and divide that Cashews in two portions.
  2. Now,in same pan Roast Onions till Golden brown.After that Roast Tomato.
  3. In Mixture Jar, Make a Fine Smooth Paste of Onions, Tomato, One Portion of Cashew and Ginger Chilli paste.
  4. Heat Oil and Butter togather and add  Cumin seeds, also add bay leaf , cloves and cinnamon and roast for a while.
  5. Now, Add your onion Paste and cook until it reduces oil.It takes almost 15 mins.Add Routine Masalas and salt too.
  6. Add Whole Roasted  Cashews and Fresh Cream. Mix them well
  7. Garnish With Coriander and Cashews.
  8. Serve Hot with any indian bread.Here I Serve With Paratha.

  • You can avoid Butter.
